10 Minute Caramelized Onions with a Surprise Ingredient
Perfect Caramelized Onions in 10 minutes flat.
Are you ready to have another standard culinary technique shattered? How about when it results in the best caramelized onions you have ever eaten?
I wish I had a dollar for every minute I have spent in my life caramelizing onions. Most recipes call for low heat and anywhere from 40 to 90 minutes to caramelize onions to a deep brown. This technique is an answer to all those lonely minutes stirring, stirring, stirring onions: Quick Caramelized Onions. Just add a pinch of baking soda to the oil and onions in the pan and they will caramelize perfectly and quickly. I was skeptical, but I gotta tell you, this really works. These are not only deep and rich in flavor, but they also do not turn to mush, which happens too often when I try caramelizing onions. These are delicious, and are soft but have just enough body to them.
Another trick I learned recently – do NOT add salt until the very end. The onion slices need their moisture, and caramelize better without drawing out the water while they are cooking.
I love Vidalia onions for this recipe – so sweet – but you can use any type in a pinch.
This trick works like a dream – your onions will turn dark and rich and flavorful, but still have some body to them. I’m not saying I ate the whole batch, but hey. In my defense – these are truly addicting.
New Resolution: Caramelized Onions on Everything!
10 MINUTE CARAMELIZED ONIONS
2 cups slices of Vidalia onions, 1/4 inch thick
2 teaspoons vegetable oil
Pinch of baking soda
1/2 teaspoon salt
Heat a large skillet to medium heat. Add oil and then onions. Sprinkle with a pinch of baking soda (no more than 1/8 teaspoon).
Cook for about 10 minutes, until deep golden brown, stirring constantly. Stir in salt just before removing from pan.
Mexican Chicken Casserole
3 -4 chicken breasts
1 (10 1/2 ounce) cans cheddar cheese soup
1 (10 1/2 ounce) cans cream of chicken soup
1 (8 ounce) jars salsa
1 (4 ounce) cans diced green chilies
1 (16 ounce) bags nacho cheese flavor Doritos, crushed ( large bag)
1 (8 ounce) bags mexican cheese
1 (8 ounce) packages jalapeno jack cheese, shredded
canned jalapeno slices or sliced ripe olives, for presentation
Boil the chicken until done. Pull apart. Keep the broth.
Mix soups, salsa, and chilies together. Set aside.
In 13x9 pan, layer half of the doritos, half of the chicken, half of the sauce, and then half of the cheese. Pour about 1/4 cup of the broth on top.
Repeat ending with cheese and broth.
Add on sliced jalapenos or black olive slices for presentation, if you wish.
Bake at 350 for 30 minutes.

Ree's Mexican Rice Casserole
Total:55 minActive: 15 min
Yield: 12 servings
2 tablespoons canola oil
3 cloves garlic, minced
1/2 to 1 whole large onion, chopped
4 cups long grain rice
Two 14.5-ounce cans whole tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
1 teaspoon cumin (or more to taste)
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
6 to 8 cups low-sodium chicken broth (more if needed)
1 1/2 cups grated Cheddar
Fresh cilantro, chopped, for serving
Preheat the oven to 375 degrees F.
Heat the oil in a large dutch oven and add the garlic and onions. Cook, 3 to 4 minutes. Reduce the heat to low and add the rice. Stir constantly, making sure the rice doesn't burn. Cook over low heat, about 3 minutes.
Next, add the whole tomatoes, diced tomatoes, cumin, salt, pepper, cayenne and turmeric. Stir to combine and let cook, about 2 minutes. Finally, add the chicken broth and stir the mixture together. Bring the mixture to a boil, and then reduce heat to low. Cover, and simmer until the rice is not quite done, 10 to 15 minutes.
Top with the cheese, and then bake with the lid off until the cheese is melted and the rice fully cooked, about 15 minutes. Serve with chopped cilantro.

Cheesy Cauliflower Patties
1 large cauliflower
1/2 chedder cheese, grated
1/2 c panko bread crumbs
1/2 tsp cayenne pepper
1. Cut cauliflower into florets & cook in boiling water until tender about 10 minutes.
Mash the cauliflower while still warm.
Stir cheese, eggs, panko, cayenne & salt to taste.
Coat the bottom of a griddle or skillet with olive oil over medium-high heat.
Form the cauliflower mixture into patties about 3 inches across.
Cook until golden brown & set, about 3 minutes per side.
Keep each batch warm in the oven while you cook the rest.

make sure you use all of these ingredients.
We buy lots of lemons, joe found them on sale, i freeze them. When i need one, i put the frozen lemon in the microwave, 30-60 seconds. Taste like the day you bought them. And it's even easier getting the juice ater it's been frozen. I also dig out the pulp and add to the jar.
Freeze up to a year
here is the recipe for special tumerick drink
in a empty mayonaise jar, fill half way with icey cold water
1 tablespoon tumerick powder
1 tablespoon ginger powder
1 teaspoon cayenne pepper
1 whole squeezed fresh lemon
1 tablespoon raw honey we get ours at the bulk food 14 bucks
place cap to jar and shake
that amount should last you either two days or three.
This was on dr oz.

Award Winning Peaches and Cream Pie
3/4 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 (3 ounce) package non-instant vanilla pudding mix
3 tablespoons butter, softened
1/2 cup milk
1 (29 ounce) can sliced peaches, drained and syrup reserved
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1 tablespoon white sugar
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Grease sides and bottom of a 10 inch deep-dish pie pan.
In a medium mixing bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Arrange the peach slices on top of the pudding mixture.
In a small mixing bowl, beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tablespoons reserved peach syrup. Beat for 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top.
Bake in preheated oven for 30 to 35 minutes, until golden brown. Chill before serving.

Easy Granola Bars
+3 cups quick-cooking oats
+1 (14 ounce) can sweetened condensed milk
+2 tablespoons butter, melted
+1 cup flaked coconut
+1 cup sliced almonds
+1 cup miniature semisweet chocolate chips
+1/2 cup sweetened dried cranberries
+Add all ingredients to list
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries with your hands until well blended. Press flat into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving
Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier
Long John Silver's Batter
3/4 cup flour
2 tablespoons cornstarch...
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water
Sift dry ingredients.
Add water and mix well.
Use to coat fish or chicken filets.
Cover the fish completely.
Deep fry until a nice golden brown.
I have made this recipe 6 times already. Its that good. You can't even tell it's made with ground turkey. Heck, it passed as hamburger to me.

1 pound ground turkey
1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 14.5-ounce can black beans, drained and rinsed
1 cup prepared fresh salsa
1 chipotle chile in adobo, chopped, plus 1 tablespoon adobo sauce
12 corn tortillas or taco shells or neither.
Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.
